En pays CathareThis is the second of a series of explorations of French “terroir” – a
conception of land as an organism whose characteristics and products
are intimately linked to the nature of its soil and the crafts of its
people. A “terroir” appeals to your senses. It is a harmony of tastes,
colors, sounds and feelings that are unique, exclusive and singular.
